Ingredients (Makes about 12 bars)
For the Nougat Layer:
- 100g (1/2 cup) granulated sugar
- 60ml (1/4 cup) light corn syrup or honey
- 60ml (1/4 cup) water
- 1 large egg white
- 1/2 teaspoon vanilla extract
- Pinch of salt
For the Caramel Peanut Layer:
- 200g (1 cup) soft caramel candies
- 30ml (2 tbsp) heavy cream
- 100g (3/4 cup) salted peanuts, chopped
For the Chocolate Coating:
- 300g (2 cups) milk or dark chocolate, melted
- 1 tbsp coconut oil or vegetable oil (for smoothness)
Instructions
Step 1: Make the Nougat Layer
- Line an 8×8-inch (20×20 cm) pan with parchment paper.
- In a small saucepan, heat sugar, corn syrup (or honey), and water over medium heat, stirring until the sugar dissolves. Bring to a boil and cook until it reaches 135°C (275°F) on a candy thermometer.
- While the syrup heats, beat the egg white in a clean bowl until stiff peaks form.
- Slowly drizzle the hot syrup into the egg white while mixing continuously on low speed. Once combined, increase the speed and beat until fluffy.
- Stir in vanilla extract and salt, then spread the nougat evenly in the lined pan. Refrigerate for 20 minutes to set.
Step 2: Make the Caramel Peanut Layer
- In a microwave-safe bowl, heat the caramels and heavy cream in 20-second intervals, stirring between each, until fully melted and smooth.
- Stir in the chopped peanuts, then spread the caramel mixture evenly over the nougat layer.
- Refrigerate for 30 minutes until firm.
Step 3: Cut and Coat the Bars
- Once set, lift the nougat-caramel layer out of the pan and cut it into 12 even bars.
- Melt the chocolate and coconut oil together in a microwave-safe bowl in 20-second intervals, stirring until smooth.
