Keto Chicken Cheese Bake

A creamy and cheesy low-carb dish packed with tender chicken, rich cream cheese, and melty mozzarella. This easy keto-friendly casserole is perfect for a comforting weeknight dinner or meal prep!


Ingredients

  • 2 lbs chicken breasts, cooked and shredded
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley, for garnish (optional)

Instructions

Prepare the Chicken:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large bowl, combine cooked shredded chicken, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Toss to coat evenly.

Make the Creamy Sauce:

  1. In a separate bowl, mix softened cream cheese, sour cream, heavy cream, and Parmesan cheese until smooth.

Assemble the Casserole:

  1. Spread the seasoned chicken evenly in the greased baking dish. Pour the creamy sauce over the chicken, spreading it evenly.
  2. Sprinkle mozzarella cheese on top, covering the chicken and sauce layer completely.

Bake the Casserole:

  1. Bake in the preheated oven for 20–25 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve:

  1. Let the casserole cool for 5 minutes. Garnish with chopped parsley, if desired. Serve warm.

  • Chicken: Rotisserie chicken works well for convenience. You can also use leftover chicken or turkey.
  • Cheese Variations: Feel free to swap mozzarella with cheddar, Swiss, or Monterey Jack for different flavors.
