Ingredients:
- 500g ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 800g crushed tomatoes
- 500ml beef broth
- 250g dry lasagna noodles, broken into pieces
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
- Cook the Ground Beef:
- In a large pot or Dutch oven, heat a little oil over medium heat. Add the 500g ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Sauté the Aromatics:
- Add the chopped onion and cook for about 5 minutes, or until softened. Add the minced garlic and cook for another minute until fragrant.
- Add the Tomatoes and Broth:
- Stir in the crushed tomatoes and beef broth, then season with dried basil, dried oregano, red pepper flakes, salt, and black pepper. Bring the soup to a boil.
- Add the Noodles:
- Once the soup is boiling, stir in the broken lasagna noodles. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the noodles are tender.
- Prepare the Cheese Mixture:
- While the soup simmers, mix together the ricotta cheese, mozzarella cheese, and Parmesan cheese in a bowl.
- Serve the Soup:
- Ladle the soup into bowls. Spoon a generous dollop of the cheese mixture on top of each serving, and stir until the cheese melts into the soup.
- Garnish and Serve:
- Garnish with fresh basil or parsley if desired, and serve hot with a slice of crusty bread for dipping.

Tips for Best Results:
- Use Ground Turkey: For a lighter version, you can substitute ground beef with ground turkey.
- Don’t Overcook the Noodles: Since lasagna noodles will continue to cook in the soup, be sure not to overcook them while simmering. Keep an eye on them to maintain a tender texture.
- Make Ahead: This soup is great for meal prep. You can store it in the fridge for a few days or freeze it for up to 3 months.
- Add Extra Veggies: Feel free to add chopped spinach, zucchini, or bell peppers to the soup for added nutrition and flavor.
