Ingredients (Serves 6)
For the Soup:
- 1 tablespoon (15ml) olive oil
- 1/2 pound (225g) ground beef
- 1/2 pound (225g) Italian sausage, casings removed
- 1 small onion (100g), diced
- 3 cloves garlic, minced
- 1 can (800g) crushed tomatoes
- 4 cups (960ml) beef broth
- 2 cups (480ml) water
- 1 can (400g) tomato sauce
- 2 tablespoons (30g) tomato paste
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional, for heat)
- 8 lasagna noodles, broken into bite-sized pieces
For the Cheese Topping:
- 1 cup (120g) shredded mozzarella cheese
- ½ cup (60g) shredded Parmesan cheese
- ½ cup (120g) ricotta cheese
- 1 teaspoon Italian seasoning
Instructions
Step 1: Brown the Meat
- Heat olive oil in a large pot over medium-high heat.
- Add ground beef and Italian sausage, breaking it up with a spoon. Cook for 5-6 minutes until browned.
- Add onion and cook for another 3 minutes, until soft.
- Stir in garlic and cook for 30 seconds until fragrant.
Step 2: Simmer the Soup
- Add crushed tomatoes, tomato sauce, tomato paste, beef broth, water, salt, pepper, basil, oregano, and red pepper flakes.
- Stir well and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
Step 3: Cook the Pasta
- Add the broken lasagna noodles to the soup.
- Let them cook for 8-10 minutes, or until tender. Stir occasionally.
Step 4: Prepare the Cheese Mixture
- In a bowl, mix ricotta, mozzarella, Parmesan, and Italian seasoning.
- Set aside for topping.
Step 5: Serve & Enjoy!
- Ladle the hot soup into bowls.
- Add a generous scoop of the cheese mixture on top.
