- 1 lb Ground Beef
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 1 (15-ounce) can Diced Tomatoes (do not drain)
- 1 (15-ounce) can Tomato Sauce
- 3 oz Tomato Paste (¼ cup)
- 4 cups Chicken Broth
- 1-2 cups Water (optional, to adjust consistency)
- 1 tablespoon Italian Seasoning
- 1 teaspoon Sea Salt (or to taste)
- Black Pepper, to taste
- 8 oz Bowtie Pasta (uncooked)
Toppings
- ½ cup Ricotta Cheese
- 2 oz Mozzarella Cheese, shredded
- ¼ cup Parmesan Cheese, grated or shaved
- ¼ cup Fresh Parsley, chopped
Instructions
- Heat olive oil in a large soup pot over medium-high heat. Add ground beef, onions, and garlic. Cook until beef is browned and cooked through. Drain excess fat if needed.
- Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, pepper, and pasta. Bring to a boil, then reduce to a simmer for 10-15 minutes until pasta is cooked.
- Adjust the consistency by adding water or broth if needed.
- Serve with ricotta, mozzarella, Parmesan, and fresh parsley on top. Enjoy!
Notes
- Use sturdy pasta like bowtie, penne, or rigatoni to avoid soggy noodles.
- Substitute ground beef with turkey or Italian sausage for variety.
- This soup stores well in the fridge for up to 5 days or can be frozen for up to 90 days.
- When reheating, add extra broth as the pasta absorbs liquid over time.
