This Lemon Blueberry Filo Pastry Soufra combines layers of crispy filo pastry with a creamy, zesty lemon custard filling and fresh blueberries. A perfect dessert for special occasions or to impress your guests with its delightful textures and flavors.
Ingredients:
- 375g Antoniou Filo Pastry
- 250g unsalted butter, melted
- 600ml thickened cream (whipping cream in the USA)
- 200g caster sugar
- 5 eggs
- 1 teaspoon vanilla bean paste
- Zest of 2 lemons
- 125g fresh blueberries
- Icing sugar, for dusting
Recipe Tips:
- The soufra may rise during the second bake, but it will settle back in place as it cools.
- This recipe can be made in either a smaller or larger baking tray, just be sure not to overfill the tray with the custard mixture.
Method:
- Prepare the Pastry:
Remove the filo pastry from the fridge to bring it to room temperature. Preheat your oven to 180°C (350°F). Grease a 30cm round baking tray with melted butter. - Make the Custard:
In a large bowl or jug, whisk together the thickened cream, caster sugar, eggs, vanilla bean paste, and lemon zest until fully combined. Set aside. - Assemble the Filo Pastry:
Lay one sheet of filo pastry flat on your work surface, with the short side facing you. Brush it generously with melted butter and place another sheet of filo on top. Fold the pastry in an accordion (concertina) style, and then coil it into a rose shape. Place the coiled filo in the center of the prepared baking tray. Continue with the remaining filo sheets, forming coils and layering them around the center until the tray is filled. - First Bake:
Brush the entire filo pastry with the remaining melted butter and bake for approximately 15 minutes or until lightly golden brown. - Add the Custard:
Once the filo pastry is golden, pour the prepared custard mixture evenly over the pastry. Scatter fresh blueberries over the top, pressing some gently into the pastry. - Second Bake:
Return the tray to the oven and bake for an additional 30 minutes or until the custard is set and the top is golden. - Cool and Serve:
Remove from the oven and allow to cool. Once cooled, dust with icing sugar and serve. Enjoy!
