Itโ€™s ideal for a quick weeknight dinner or a special weekend meal โ€” simple, light, and packed with bright, fresh flavors.

๐Ÿง‚ Ingredients

For 2โ€“4 servings:

  • 2 salmon fillets (about 6 oz / 170 g each)
  • 400 g baby potatoes, halved or quartered
  • 1 small head of broccoli, cut into florets
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp dried thyme or fresh sprigs
  • Fresh parsley, chopped (for garnish)

๐Ÿณ Instructions

Step 1: Prepare the Potatoes

  1. Preheat oven to 425ยฐF (220ยฐC).
  2. Toss potatoes with 1 tbsp olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20โ€“25 minutes, turning halfway, until golden and crispy.

Step 2: Cook the Salmon

  1. While the potatoes roast, heat 1 tbsp olive oil in a skillet over medium heat.
  2. Season salmon with salt, pepper, and a pinch of thyme.
  3. Sear salmon 3โ€“4 minutes per side until golden and just cooked through. Remove and set aside.

Step 3: Make the Lemon Butter Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add minced garlic and cook 30 seconds until fragrant.
  3. Stir in lemon juice, zest, and remaining thyme.
  4. Pour sauce over the cooked salmon fillets.

Step 4: Steam the Broccoli

  1. Steam broccoli florets for 4โ€“5 minutes until bright green and tender-crisp.
  2. Season lightly with salt and a drizzle of olive oil.

Step 5: Serve

  • Plate salmon with roasted potatoes and steamed broccoli.
  • Drizzle extra lemon butter sauce over the top.
  • Garnish with fresh parsley before serving.

๐Ÿ’ก Tips & Tricks

  • Crispy potatoes: Cut potatoes evenly and donโ€™t overcrowd the pan.
  • Salmon donโ€™t overcook: Remove from heat when it flakes easily with a fork.
  • Extra flavor: Add a sprinkle of smoked paprika or chili flakes to the potatoes.
  • One-pan option: Roast salmon alongside potatoes in the oven for convenience.

๐Ÿฝ๏ธ Variations

  • Garlic Parmesan: Sprinkle grated Parmesan over potatoes before roasting.
  • Spicy Lemon Salmon: Add a pinch of red pepper flakes to the sauce.
  • Herb Butter: Mix parsley, dill, or chives into the butter sauce.
  • Veggie swap: Use asparagus or green beans instead of broccoli.
