Ingredients
- 2 lbs potatoes, diced into 1-inch pieces
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 packet (1 oz) ranch seasoning mix
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cooked, crumbled bacon
- 2 cups shredded cheddar cheese
- 2 green onions, sliced (optional, for garnish)
Instructions
- Preheat Oven:
- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Prepare the Potatoes:
- In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, and half the ranch seasoning mix. Spread the potatoes evenly in the prepared baking dish and bake for 20 minutes.
- Add the Chicken:
- Remove the baking dish from the oven. Toss the chicken pieces with the remaining ranch seasoning and layer them over the partially cooked potatoes. Return the dish to the oven and bake for another 20–25 minutes, or until the chicken is cooked through and the potatoes are tender.
- Top and Bake Again:
- Sprinkle the cooked bacon and shredded cheese evenly over the casserole. Bake for an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with sliced green onions if desired, and serve hot.
Notes
- Use rotisserie chicken for a quicker version; just add it after the potatoes are cooked.
