Ingredients:
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper, to taste
For the Sauce:
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional, for heat)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup sun-dried tomatoes, chopped (oil-packed)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
For the Pasta:
- 8 oz fettuccine or any pasta of your choice
- Salt (for pasta water)

Instructions:
- Cook the Chicken:
- Season both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.
- Cook the Pasta:
- While the chicken is cooking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, then drain and set aside.
- Make the Sauce:
- In the same skillet used for the chicken, add 1 tablespoon of olive oil and sauté the minced garlic over medium heat for about 1 minute, until fragrant.
- Add the red pepper flakes (if using), heavy cream, and chicken broth. Stir to combine and bring the mixture to a gentle simmer.
- Add the chopped sun-dried tomatoes, oregano, and basil. Let the sauce simmer for 5-7 minutes, allowing it to thicken slightly.
- Stir in the Parmesan cheese and continue to simmer until the cheese has melted and the sauce is smooth.
- Combine the Chicken and Pasta:
- Slice the cooked chicken into strips or bite-sized pieces.
- Add the cooked pasta to the skillet with the sauce, tossing to coat the pasta evenly in the creamy sauce.
- Add the sliced chicken on top of the pasta and gently toss to combine.
- Serve:
- Garnish the pasta with fresh parsley and more grated Parmesan cheese if desired. Serve immediately and enjoy!
Tips:
- You can use other types of pasta like penne, rigatoni, or spaghetti if you prefer.
- For an extra creamy sauce, you can add a bit more heavy cream or a tablespoon of cream cheese.
- If you want more veggies, you can stir in some spinach or peas while simmering the sauce.
