Mexican Wedding Cookies, also known as Polvorones, are delicate, buttery, melt-in-your-mouth treats that are a staple at holiday celebrations. These cookies are traditionally rolled in powdered sugar, giving them their signature sweet, snowy appearance. Perfect for gifting or enjoying with a cup of tea, these cookies will instantly become a favorite.
Ingredients
✅ 1 cup (2 sticks) unsalted butter (softened)
✅ 1/2 cup powdered sugar (plus extra for rolling)
✅ 1 teaspoon vanilla extract
✅ 2 cups all-purpose flour
✅ 1/4 teaspoon salt
✅ 1/2 cup chopped pecans or walnuts (optional)
Instructions
Step 1: Preheat the Oven
1️⃣ Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Cream the Butter and Sugar
2️⃣ In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 3-4 minutes.
3️⃣ Add vanilla extract and mix until incorporated.
Step 3: Add Dry Ingredients
4️⃣ Gradually add the flour and salt to the butter mixture, mixing until just combined. The dough will be crumbly, which is normal.
5️⃣ Stir in the chopped pecans or walnuts (if using).
Step 4: Form the Cookies
6️⃣ Scoop out about 1 tablespoon of dough and roll it into a ball, then gently flatten it slightly with your fingers.
7️⃣ Place the cookies on the prepared baking sheet, leaving about 1 inch of space between each one.
Step 5: Bake
8️⃣ Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden.
9️⃣ Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes.
Step 6: Coat in Powdered Sugar
🔟 While the cookies are still warm, gently roll them in powdered sugar to coat them evenly. Let them cool completely on a wire rack.
1️⃣1️⃣ Once cool, roll the cookies in powdered sugar once more for a snowy finish.
Tips for Perfect Mexican Wedding Cookies
✔ Chill the Dough: If the dough feels too soft or sticky, refrigerate it for 15-30 minutes to make it easier to shape.
✔ Nut-Free Option: If you have nut allergies or prefer a simpler cookie, feel free to omit the nuts.
✔ Flavor Variations: You can infuse the dough with other flavors like cinnamon, orange zest, or almond extract for a unique twist.
✔ Make Them Ahead: These cookies stay fresh for several days and even improve in flavor after sitting for a day or two, making them perfect for advance preparation.
