Ingredients

For the Crust

  • 1 cup (100 g) graham cracker crumbs
  • 3 tbsp granulated sugar
  • 4 tbsp (60 g) unsalted butter, melted

For the Cheesecake Filling

  • 16 oz (450 g) cream cheese, softened
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 ml) heavy cream

For the Crème Brûlée Topping

  • ¼ cup (50 g) granulated sugar, for caramelizing

Instructions

1. Prepare the crust

  • Preheat oven to 325°F (160°C).
  • In a small bowl, mix graham cracker crumbs, sugar, and melted butter.
  • Press the mixture firmly into the bottom of lined muffin tins (for 12 mini cheesecakes).

2. Make the cheesecake filling

  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing until incorporated.
  • Stir in vanilla extract and heavy cream until creamy.

3. Assemble and bake

  • Pour filling over the prepared crusts, filling each muffin cup about ¾ full.
  • Bake 18–22 minutes, until the edges are set but centers are slightly jiggly.
  • Remove from oven and let cool at room temperature, then refrigerate for at least 2 hours.

4. Caramelize the sugar topping

  • Sprinkle about 1 tsp granulated sugar evenly on top of each chilled cheesecake.
  • Use a kitchen torch to caramelize the sugar until golden and crispy.
  • Allow sugar to harden for a minute before serving.

5. Serve

  • Serve immediately after caramelizing for the classic crème brûlée crack.

Ingredients

Directions

  • Preheat oven to 325°F (160°C). Line a muffin tin with 6–8 paper liners.
  • Mix graham cracker crumbs, butter, and sugar. Press into the bottom of each liner to form a crust.
  • Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing gently.
  • Pour filling over crusts and bake 18–20 minutes until set. Cool completely, then refrigerate at least 2 hours.
