This easy No-Bake Chocolate Éclair Cake is a dreamy dessert made with layers of graham crackers, creamy vanilla pudding, and a luscious chocolate topping. Perfect for potlucks, holidays, or any time you need a no-fuss treat!
Ingredients
For the Cake Layers:
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 box (14.4 oz) graham crackers
For the Chocolate Topping:
- 1/3 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/4 cup milk
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Pudding Filling:
- In a large mixing bowl, whisk together the vanilla pudding mix and cold milk until smooth and thickened, about 2 minutes.
- Gently fold in the thawed whipped topping until well combined.
2. Assemble the Cake:
- In a 9×13-inch baking dish, arrange a layer of graham crackers, breaking them as needed to fit the bottom.
- Spread half of the pudding mixture evenly over the graham crackers.
- Add another layer of graham crackers on top of the pudding, followed by the remaining pudding mixture.
- Finish with a final layer of graham crackers.
3. Make the Chocolate Topping:
- In a small saucepan over medium heat, whisk together the cocoa powder, sugar, and milk.
- Add the butter and cook, stirring constantly, until the mixture comes to a boil. Let boil gently for 1 minute, then remove from heat.
- Stir in the vanilla extract and allow the mixture to cool slightly, about 10–15 minutes, until it thickens slightly but is still pourable.
4. Finish the Cake:
- Pour the cooled chocolate topping evenly over the top layer of graham crackers. Use a spatula to spread it to the edges.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the layers to set and the graham crackers to soften.
5. Serve and Enjoy:
- Slice into squares and serve chilled.
Tips and Notes
