These no-bake chocolate oatmeal bars are the perfect quick treat! With layers of chewy oats and rich chocolate, they’re great for dessert, a snack, or whenever your sweet tooth strikes. Made with simple ingredients, this no-bake recipe is ready in no time!

Ingredients

  • 1 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 tsp vanilla extract
  • 3 cups quick-cooking oats
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter (or almond butter for variation)

Instructions

  1. Prepare the Oat Layer:
    • In a medium saucepan over medium heat, melt the butter and stir in the brown sugar and vanilla until smooth.
    • Mix in the oats and salt, stirring until fully combined. Cook for 2-3 minutes to slightly soften the oats.
  2. Layer the Mixture:
    • Press half of the oat mixture into the bottom of a greased or parchment-lined 8×8-inch baking dish. Use a spatula or the back of a spoon to pack it tightly.
  3. Make the Chocolate Layer:
    • In a microwave-safe bowl, melt the chocolate chips and peanut butter in 20-second intervals, stirring between each, until smooth.
  4. Assemble the Bars:
    • Pour the melted chocolate mixture over the oat layer in the pan, spreading it evenly.
    • Crumble the remaining oat mixture over the chocolate layer and gently press it down.
  5. Chill:
    • Refrigerate for at least 2-3 hours, or until the bars are firm.
  6. Slice and Serve:
    • Once set, cut into bars or squares. Store in the refrigerator for up to a week.

Tips for Perfect Bars

  • Use quick oats: For the best texture, avoid old-fashioned or steel-cut oats.
  • Line the pan: Parchment paper makes removing and slicing the bars easier.
  • Add a twist: Sprinkle with flaky sea salt or add chopped nuts for extra flavor.
