Ingredients
- 1 cup unsalted butter
- 1/2 cup brown sugar, packed
- 1 tsp vanilla extract
- 3 cups quick-cooking oats
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter (or almond butter for variation)
Instructions
- Prepare the Oat Layer:
- In a medium saucepan over medium heat, melt the butter and stir in the brown sugar and vanilla until smooth.
- Mix in the oats and salt, stirring until fully combined. Cook for 2-3 minutes to slightly soften the oats.
- Layer the Mixture:
- Press half of the oat mixture into the bottom of a greased or parchment-lined 8×8-inch baking dish. Use a spatula or the back of a spoon to pack it tightly.
- Make the Chocolate Layer:
- In a microwave-safe bowl, melt the chocolate chips and peanut butter in 20-second intervals, stirring between each, until smooth.
- Assemble the Bars:
- Pour the melted chocolate mixture over the oat layer in the pan, spreading it evenly.
- Crumble the remaining oat mixture over the chocolate layer and gently press it down.
- Chill:
- Refrigerate for at least 2-3 hours, or until the bars are firm.
- Slice and Serve:
- Once set, cut into bars or squares. Store in the refrigerator for up to a week.
Tips for Perfect Bars
- Use quick oats: For the best texture, avoid old-fashioned or steel-cut oats.
- Line the pan: Parchment paper makes removing and slicing the bars easier.
- Add a twist: Sprinkle with flaky sea salt or add chopped nuts for extra flavor.
