For Topping:

  • Extra graham cracker crumbs

Instructions

  1. Prepare the Lemon Jell-O Mixture:
    • In a small bowl, combine the lemon Jell-O and boiling water. Stir until completely dissolved. Set the mixture aside to cool slightly.
  2. Make the Graham Cracker Crust:
    • In a medium bowl, mix the graham cracker crumbs and melted butter until the crumbs are evenly coated.
    • Press the crumb mixture firmly into the bottom of a 9×13-inch baking pan to form the crust. Set aside.

    • In a large mixing bowl, beat the cold heavy whipping cream with an electric mixer until soft, fluffy peaks form. Set aside.
  4. Prepare the Cream Cheese Mixture:
    • In another large mixing bowl, beat the softened cream cheese, granulated sugar, and freshly squeezed lemon juice until smooth and creamy.
    • Slowly pour in the cooled lemon Jell-O mixture while continuing to beat until well combined.
  5. Combine the Mixtures:
    • Gently fold the whipped cream into the cream cheese and lemon Jell-O mixture until fully incorporated and smooth.
  6. Assemble the Cheesecake:
    • Spread the cheesecake filling evenly over the prepared graham cracker crust.
    • Sprinkle the top with additional graham cracker crumbs for a decorative finish.
  7. Chill the Cheesecake:
    • Refrigerate the cheesecake for at least 2 hours, or overnight, until set and firm.
  8. Serve:
    • Slice the chilled cheesecake into squares and serve. Enjoy the light, creamy goodness!

Notes

  • Chill Time: For best results, allow the cheesecake to chill overnight to ensure it sets perfectly.
  • Lemon Flavor: Freshly squeezed lemon juice provides the best flavor, but bottled juice can be used in a pinch.
  • Graham Cracker Crumbs: Use pre-crushed crumbs for convenience or crush graham crackers yourself using a food processor or rolling pin.
  • Storage: Store leftovers in the refrigerator, covered, for up to 4 days.
