Description

One Pot Kielbasa Pasta is a quick, hearty, and flavorful weeknight meal that combines smoky kielbasa, tender pasta, vegetables, and a creamy, garlicky sauce—all cooked in a single pot for easy cleanup. This dish is perfect when you want comfort food without spending hours in the kitchen. With bold, smoky sausage flavor, creamy sauce, and vibrant vegetables, it’s a family-friendly dinner that comes together in about 30 minutes.

Ingredients

For the Pasta

  • 12 oz penne, rotini, or rigatoni
  • 1 lb (≈450 g) kielbasa, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets (optional)
  • 1 cup frozen peas (optional)

For the Sauce

  • 2 cups chicken broth
  • 1 cup heavy cream (or half-and-half for lighter version)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional for extra smokiness)
  • ½ teaspoon dried thyme or Italian seasoning
  • ½ cup grated Parmesan cheese

Optional Garnish

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook the Kielbasa
Heat olive oil in a large skillet or deep sauté pan over medium heat.
Add sliced kielbasa and cook 4–5 minutes until lightly browned. Remove and set aside.
  2. Sauté Vegetables
In the same pan, add onion, bell pepper, and broccoli (if using). Sauté for 3–4 minutes until slightly softened. Add minced garlic and cook for 30 seconds.
  3. Add Pasta and Liquid
Pour in chicken broth and heavy cream. Stir to combine, scraping any browned bits from the bottom of the pan.
Add uncooked pasta, ensuring it is mostly submerged in the liquid.
  4. Simmer the Pasta
Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, for 10–12 minutes, until pasta is cooked and the sauce thickens. Add more broth if the pasta absorbs the liquid too quickly.
  5. Return Kielbasa and Add Cheese
Stir the browned kielbasa back into the skillet. Add Parmesan cheese and stir until the sauce is creamy and everything is evenly coated.
  6. Season and Serve
Taste and adjust seasoning with salt, pepper, or smoked paprika as desired. Garnish with chopped parsley and extra Parmesan before serving.

Tips for Success

  • Use a heavy skillet or Dutch oven to prevent sticking and ensure even cooking.
  • Stir frequently to prevent pasta from sticking to the bottom.
  • Add vegetables gradually: heartier veggies like broccoli early, delicate peas last.
  • Use freshly grated Parmesan for better melting and flavor.
  • For extra creamy pasta, stir in 2 tablespoons of cream cheese at the end.

Variations

  • Spicy Kielbasa Pasta: Add red pepper flakes or a dash of hot sauce.
  • Vegetable-Packed: Add zucchini, mushrooms, or spinach for extra nutrition.
  • Cheesy Version: Top with mozzarella or extra Parmesan before serving.
  • Chicken & Kielbasa Pasta: Add cooked chicken for more protein.
  • Gluten-Free: Use gluten-free pasta and adjust cooking time.
