This hearty and flavorful recipe is cooked all in one pot, making cleanup a breeze. Packed with ground beef, taco seasoning, and a cheesy, creamy sauce, this dish is sure to satisfy your craving for tacos and pasta in one meal.
Ingredients:
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 small onion, diced
- 1 packet taco seasoning (or 2-3 tablespoons homemade taco seasoning)
- 1 can (10 oz) diced tomatoes with green chilies (or regular diced tomatoes)
- 1 cup beef broth (or chicken broth)
- 1 can (6 oz) tomato paste
- 8 oz uncooked spaghetti (broken in half)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (optional for creaminess)
- 1/4 cup sliced green onions (optional, for garnish)
- Salt and pepper, to taste
Instructions:
- Cook the Ground Beef:
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break it apart with a spoon as it cooks. Drain any excess fat if necessary.
- Add the Onion:
- Add the diced onion to the pot and sauté for 2-3 minutes until softened.
- Season the Meat:
- Stir in the taco seasoning and cook for another 1-2 minutes, allowing the seasoning to fully coat the meat.
- Add Tomatoes and Broth:
- Add the can of diced tomatoes (with their juices), beef broth, and tomato paste. Stir everything together to combine.
- Add the Spaghetti:
- Break the uncooked spaghetti in half and add it to the pot. Stir well to ensure the pasta is submerged in the liquid.
- Cook the Pasta:
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 12-15 minutes, or until the spaghetti is tender and the liquid has mostly been absorbed. Stir occasionally to prevent sticking.
- Add Cheese and Sour Cream:
- Once the spaghetti is cooked, stir in the shredded cheddar cheese and sour cream (if using) until the cheese is melted and everything is well combined.
- Serve:
- Taste and adjust seasoning with salt and pepper if needed. Serve the taco spaghetti hot, garnished with sliced green onions or additional toppings like sour cream, shredded lettuce, or diced tomatoes.
