This One-Pot Taco Spaghetti is the perfect fusion of Tex-Mex flavors and classic pasta! Packed with seasoned ground beef, zesty taco spices, and gooey cheese, this quick and easy dinner will be a family favorite.
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning (1 oz)
- 2 cups beef or chicken broth
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (8 oz) can tomato sauce
- 8 oz spaghetti, broken in half
- 1 cup shredded cheddar cheese
- Optional toppings: chopped cilantro, diced avocado, sour cream, tortilla chips
Instructions
- Cook the Beef:
- In a large pot or Dutch oven, cook the ground beef and onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
- Add Seasoning and Liquids:
- Stir in the taco seasoning, beef broth, diced tomatoes, and tomato sauce. Mix well.
- Add Spaghetti:
- Break the spaghetti in half and stir it into the liquid mixture, making sure the pasta is mostly submerged. Bring to a boil, then reduce the heat to low. Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and the liquid is absorbed.
- Add Cheese:
- Stir in ¾ cup of the shredded cheddar cheese until melted and creamy. Sprinkle the remaining cheese on top and cover for 1–2 minutes to let it melt.
- Serve:
- Garnish with your favorite toppings like cilantro, sour cream, or tortilla chips. Serve hot!
Notes
- Use whole-wheat or gluten-free spaghetti if preferred.
- Add black beans or corn for extra texture and flavor.
