Ingredients:
- 2 (10 oz) packages frozen chopped broccoli, thawed and drained
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup French fried onions (optional, for topping)
- 1/2 cup butter, melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Prepare the Broccoli:
- If using frozen broccoli, thaw it and drain any excess water thoroughly. You can also chop the broccoli into smaller pieces if you prefer.
- Make the Casserole Mixture:
- In a large mixing bowl, combine the cream of mushroom soup, mayonnaise, Dijon mustard, garlic powder, onion powder, and a pinch of salt and pepper. Stir well until the mixture is smooth and fully combined.
- Add the Cheeses:
- Stir in the shredded cheddar cheese and grated Parmesan cheese, reserving a small amount of cheese for the topping if desired.
- Combine with Broccoli:
- Add the drained broccoli to the mixture and stir until everything is evenly coated.
- Assemble the Casserole:
- Transfer the broccoli mixture to the prepared baking dish and spread it out evenly. Pour the melted butter over the top and sprinkle with the reserved cheese (if you saved any).
- Add the Crunchy Topping:
- If using, top the casserole with French fried onions for an extra crispy topping.
- Bake the Casserole:
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and golden brown on top. If you’re using French fried onions, add them during the last 10 minutes of baking to prevent burning.
- Serve:
- Let the casserole cool slightly before serving. It’s best enjoyed hot and cheesy!
