Ingredients
Shortbread Base:
- 1 cup (2 sticks) unsalted butter, softened

Caramel Layer:
- 1 cup unsalted butter
- 1 cup packed light brown sugar
- 2 tablespoons light corn syrup
- 2 tablespoons heavy cream

Instructions
Prepare the Shortbread Base:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the Dough: In a mixing bowl, beat together the softened butter, flour, sugar, and salt until crumbly.
- Press and Bake: Press the dough evenly into the prepared baking pan. Bake for 15–20 minutes, or until lightly golden. Remove and set aside to cool.
Make the Caramel Layer:
- Cook Caramel: In a saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and heavy cream. Bring to a gentle boil and cook for 2–3 minutes, stirring constantly.
- Pour Over Shortbread: Remove from heat and pour the caramel evenly over the baked shortbread. Sprinkle the toasted pecans on top.
Add Chocolate Topping:
- Melt Chocolate: While the caramel is still warm, sprinkle the chocolate chips over the top. Let sit for 2 minutes, then use a spatula to spread the melted chocolate evenly.
- Chill: Allow the bars to cool at room temperature for 15 minutes, then transfer to the refrigerator for 1–2 hours to set.
