Pecan Turtle Bars

Deliciously buttery pecan shortbread is topped with gooey caramel and chocolate, creating irresistible pecan turtle bars that are perfect for any occasion.


Ingredients

Shortbread Base:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt

Caramel Layer:

  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 2 tablespoons light corn syrup
  • 2 tablespoons heavy cream

Topping:

  • 1 1/2 cups chopped pecans, toasted
  • 1 cup semi-sweet chocolate chips

Instructions

Prepare the Shortbread Base:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Make the Dough: In a mixing bowl, beat together the softened butter, flour, sugar, and salt until crumbly.
  3. Press and Bake: Press the dough evenly into the prepared baking pan. Bake for 15–20 minutes, or until lightly golden. Remove and set aside to cool.

Make the Caramel Layer:

  1. Cook Caramel: In a saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and heavy cream. Bring to a gentle boil and cook for 2–3 minutes, stirring constantly.
  2. Pour Over Shortbread: Remove from heat and pour the caramel evenly over the baked shortbread. Sprinkle the toasted pecans on top.

Add Chocolate Topping:

  1. Melt Chocolate: While the caramel is still warm, sprinkle the chocolate chips over the top. Let sit for 2 minutes, then use a spatula to spread the melted chocolate evenly.
  2. Chill: Allow the bars to cool at room temperature for 15 minutes, then transfer to the refrigerator for 1–2 hours to set.

Serve:

  1. Slice and Serve: Once set, remove the bars from the pan using the parchment overhang. Slice into squares or bars and serve.

Notes

  • Storage: Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • Toasting Pecans: Toasting pecans enhances their flavor. Spread them on a baking sheet and bake at 350°F for 5–7 minutes, stirring occasionally.
  • Customizations: Try dark chocolate or milk chocolate instead of semi-sweet, or use walnuts or almonds in place of pecans for a twist.
