Peppermint Brownie Bites

These Peppermint Brownie Bites are the ultimate holiday treat! Rich, fudgy brownie bites topped with a hint of peppermint and sprinkled with crushed candy canes for a festive finish. Perfect for parties or gifting!


Ingredients

Brownies:

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt

Topping:

  • ½ cup semi-sweet chocolate chips (optional for drizzle)
  • ¼ cup crushed candy canes

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line with mini cupcake liners.
  2. Make the Brownie Batter:
    • In a large bowl, whisk together melted butter and sugar until smooth. Add eggs, vanilla extract, and peppermint extract, and whisk until well combined.
    • Stir in cocoa powder, flour, baking powder, and salt until just combined. Do not overmix.
  3. Fill the Pan:
    • Spoon the batter into the prepared mini muffin pan, filling each cup about ¾ full.
  4. Bake:
    • Bake for 10–12 minutes, or until the tops are set and a toothpick inserted into the center comes out with a few moist crumbs. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. Decorate:
    • Optional: Melt chocolate chips in the microwave in 20-second intervals, stirring between each, until smooth. Drizzle over the brownie bites.
    • Sprinkle crushed candy canes on top of each bite while the chocolate is still wet.
  6. Serve:
    • Let the toppings set before serving. Enjoy as is or pair with a cup of hot cocoa!
