Ingredients
Brownies:
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp baking powder
- ¼ tsp salt
Topping:
- ½ cup semi-sweet chocolate chips (optional for drizzle)
- ¼ cup crushed candy canes
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line with mini cupcake liners.
- Make the Brownie Batter:
- In a large bowl, whisk together melted butter and sugar until smooth. Add eggs, vanilla extract, and peppermint extract, and whisk until well combined.
- Stir in cocoa powder, flour, baking powder, and salt until just combined. Do not overmix.
- Fill the Pan:
- Spoon the batter into the prepared mini muffin pan, filling each cup about ¾ full.
- Bake:
- Bake for 10–12 minutes, or until the tops are set and a toothpick inserted into the center comes out with a few moist crumbs. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Decorate:
- Optional: Melt chocolate chips in the microwave in 20-second intervals, stirring between each, until smooth. Drizzle over the brownie bites.
- Sprinkle crushed candy canes on top of each bite while the chocolate is still wet.
- Serve:
- Let the toppings set before serving. Enjoy as is or pair with a cup of hot cocoa!
