Ingredients:
- ½ cup butter (cut into 8 pieces)
- 1 tsp coarse black pepper
- ½ cup all-purpose flour
- 4 cups turkey drippings or chicken stock (or a combination of both)

Instructions:
- Prepare the drippings:
If using drippings from your turkey or chicken, strain the drippings through a fine-mesh strainer. Allow the drippings to cool slightly so that the fat rises to the top and solidifies. Use a spoon to remove the fat. If you don’t have enough drippings to make 4 cups, add chicken or turkey stock to make up the difference.If not using drippings, simply use 4 cups of chicken or turkey stock. - Make the roux:
In a large saucepan, melt the butter over medium-low heat. Once the butter is melted, sprinkle in the black pepper and whisk to combine. - Add the flour:
Gradually add the flour to the butter, whisking constantly to prevent lumps. Continue whisking for a couple of minutes until the flour is fully incorporated and the mixture becomes a smooth paste (roux). - Add the liquid:
Slowly pour in the drippings (or stock), whisking continuously to ensure the gravy remains smooth. Keep whisking as the gravy thickens, which should take about 5-7 minutes. - Serve:
Once the gravy has thickened to your desired consistency, remove it from the heat. Serve immediately, or keep it warm on low heat until ready to serve.
