Ingredients
- 4 bone-in pork chops
- 2 lbs potatoes, peeled and thinly sliced
- 1 small onion, thinly sliced
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups milk
- 1 1/2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Season the Pork Chops: Pat the pork chops dry and season both sides with garlic powder, paprika, salt, and pepper.
- Brown the Pork Chops: Heat olive oil in a skillet over medium heat. Sear the pork chops for 2-3 minutes on each side, until golden brown. Remove and set aside.
- Make the Cheese Sauce:
- In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk, cooking until the sauce thickens. Stir in 1 cup of cheddar cheese, and season with salt and pepper. Remove from heat.
- Layer the Potatoes: In the greased baking dish, layer half of the sliced potatoes and onions. Pour half of the cheese sauce over the top. Repeat with the remaining potatoes, onions, and cheese sauce.
- Add the Pork Chops: Arrange the browned pork chops on top of the potatoes. Cover the dish with aluminum foil.
- Bake: Bake in the preheated oven for 40 minutes. Remove the foil and sprinkle the remaining 1/2 cup of cheddar cheese on top. Bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
- Serve: Let cool for a few minutes before serving. Garnish with fresh parsley if desired.
Tips for the Best Pork Chops with Scalloped Potatoes
- Use Russet or Yukon Gold Potatoes: They create the creamiest texture.
- Make It Ahead: Assemble the dish in advance, cover, and refrigerate. Bake just before serving.
- Thicker Chops: If using thicker pork chops, increase the baking time by 5-10 minutes.
- Add Veggies: Layer in mushrooms, spinach, or green beans for added nutrition.
