Ingredients (Serves 4)
- 4 tostada shells
- 4 large eggs
- 1 tablespoon olive oil
- 1 cup red chile sauce (homemade or store-bought)
- 1/2 cup refried beans, warmed
- 1/4 cup queso fresco or crumbled feta
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup shredded lettuce (optional)
- 1 lime, cut into wedges
For the Homemade Red Chile Sauce (Optional)
- 3 dried guajillo chiles, stems and seeds removed
- 2 dried ancho chiles, stems and seeds removed
- 1 small onion, chopped
- 2 garlic cloves
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 cups chicken or vegetable broth
- Salt to taste
Instructions
For the Red Chile Sauce:
- Toast the chiles in a dry skillet over medium heat for 1-2 minutes until fragrant.
- Place the toasted chiles in a bowl, cover with hot water, and let soak for 15 minutes.
- In the same skillet, sauté the onion and garlic until softened.
- Blend the soaked chiles, onion, garlic, cumin, oregano, and broth until smooth. Strain if desired and simmer for 10 minutes. Season with salt.
For the Tostadas:
- Heat the olive oil in a non-stick skillet over medium heat. Crack in the eggs and cook to your desired doneness (sunny-side up or over-easy works best).
- Warm the red chile sauce if needed.
- Spread a layer of refried beans on each tostada shell.
- Drizzle a spoonful of red chile sauce over the beans.
- Top each tostada with a cooked egg.
- Add toppings: avocado slices, queso fresco, cilantro, and shredded lettuce if using.
