- 1 bag (250g) cheese tortellini
- 1 cup (240ml) heavy cream
- Salt and pepper, to taste
- 2 cups (60g) fresh spinach, chopped (optional)
Instructions
Step 1: Brown the Sausage
- Heat olive oil in a large pot over medium-high heat.
- Add Italian sausage, breaking it up with a spoon, and cook for 5-7 minutes until browned.
- Add onion and cook for 3 minutes, until softened.
- Stir in garlic and cook for 30 seconds, until fragrant.
Step 2: Simmer the Soup
- Add diced tomatoes, chicken broth, water, Italian seasoning, and red pepper flakes (if using).
