Ingredients

  • 250g (8 oz) elbow macaroni
  • 170g (6 oz) bacon, chopped
  • 1 tbsp unsalted butter
  • 1 small onion, finely chopped

  • 240ml (1 cup) whole milk
  • 240ml (1 cup) heavy cream
  • 240g (1 cup) shredded sharp cheddar cheese
  • 170g (1 ½ cups) shredded mozzarella cheese
  • ½ tsp smoked paprika
  • ½ tsp ground mustard
  • ¼ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • Salt to taste

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook the elbow macaroni according to the package directions until al dente. Drain the pasta and set aside.

Step 2: Cook the Bacon

  1. In a large skillet, cook the chopped bacon over medium heat until crispy, about 6-8 minutes.
  2. Remove the bacon from the skillet and set it aside on a paper towel-lined plate to drain the excess grease. Leave a small amount of bacon drippings in the skillet for extra flavor.

Step 3: Make the Cheese Sauce

  1. In the same skillet, melt the butter over medium heat.
  2. Add the onion and sauté until softened and translucent, about 4 minutes.
  3. Add the garlic and sauté for an additional 1 minute.
  4. Slowly pour in the whole milk and heavy cream, stirring constantly to combine. Bring the mixture to a gentle simmer but do not let it boil.
  5. Stir in the shredded cheddar and mozzarella cheese, a little at a time, until the cheese has melted and the sauce is smooth.
  6. Add the smoked paprika, ground mustard, black pepper, Worcestershire sauce, and Dijon mustard. Stir until everything is well combined. Taste and adjust the seasoning with salt if needed.

Step 4: Combine Pasta, Bacon, and Sauce

  1. Add the cooked pasta to the skillet with the cheese sauce. Stir until the pasta is well coated with the creamy sauce.
  2. Chop the cooked bacon into smaller pieces and mix it into the pasta.
