- 1 cup (200g) long-grain white rice
- 2 cups (475ml) chicken broth
- 1 can (10.5 oz/300g) cream of mushroom soup
- 1/2 cup (120ml) milk
Juicy chicken thighs and creamy rice cooked together in one dish for the ultimate comfort food!

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch (23×33 cm) baking dish.
- Prepare the Rice: Spread the uncooked rice evenly in the bottom of the baking dish. In a bowl, whisk together the chicken broth, cream of mushroom soup, and milk until smooth. Pour the mixture over the rice.
- Season the Chicken: Pat the chicken thighs dry with paper towels. Season generously with salt, pepper, garlic powder, and paprika.
- Assemble: Place the chicken thighs on top of the rice mixture in the baking dish.
- Bake: Cover the dish tightly with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the chicken skin is golden and crispy and the rice is tender.
- Serve: Let the dish rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Tips
- Add sautéed onions, garlic, or mushrooms to the rice mixture for extra flavor.
- Use boneless, skinless chicken thighs or breasts for a leaner version, but reduce the cooking time to 40–45 minutes.
- Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven or microwave.
