Ingredients:
- 1 cup unsalted butter (melted and cooled)
- ½ cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1.5 teaspoons vanilla extract
- 2.5 cups all-purpose flour
- 1 teaspoon cinnamon powder
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1.5 cups unsalted pecans (roughly chopped, preferably toasted)
- ½ cup toffee bits (optional)
Instructions:
- In a large mixing bowl, cream together the melted butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs and vanilla extract, and mix until smooth.
- Add flour, cinnamon powder, cornstarch, baking soda, and baking powder. Mix until just combined.
- Stir in the chopped pecans and optional toffee bits until evenly distributed throughout the dough.
- Chill the dough for 30-45 minutes to make it easier to handle.
- Scoop out small portions of the dough and roll them into balls. The dough may seem a bit crumbly, but the warmth of your hands will help bring it together into small balls.
- Optional: Roll each dough ball in a bowl of granulated sugar (this adds a nice finish but is not necessary).
- Place the cookie dough balls on a cookie tray lined with parchment paper.
- Bake at 350°F for about 11-14 minutes, or until cookies are golden brown and firm along the edges. The center will be “poofy” but will deflate as they cool. If they don’t deflate fully, you can press down gently with the back of a spoon.
- Let the cookies cool on the tray for a few minutes before transferring to a wire rack to cool completely.
