Ingredients:
- 1 box strawberry cake mix (Pillsbury recommended)
- 2 large eggs
- ⅓ cup vegetable or canola oil
- 1 teaspoon vanilla extract
For the glaze:
- ¾ cup powdered sugar
- 2 Tablespoons strawberry preserves (Bonne Maman recommended)
- 1 ½ Tablespoons milk
- 1 Tablespoon cream cheese (optional, see post for tips)
Instructions:
- Preheat oven to 350°F (175°C). Spray an 8×8-inch pan with nonstick spray or line it with foil.
- In a large bowl, mix together the strawberry cake mix, eggs, oil, and vanilla extract. Press the batter into the prepared pan.
- Bake for 18-22 minutes, or until done. Let cool completely.
- For the glaze: In a small bowl, whisk together powdered sugar, strawberry preserves, milk, and cream cheese (optional).
- Spread the glaze evenly over the cooled brownies.
- Slice and enjoy!
Storage:
Store in an airtight container. Layer parchment paper between layers if stacking to avoid sticking. Keep refrigerated if using the frosting, as it contains milk and jam. If made without frosting, store at room temperature.
