  • 1/4 tsp chili powder (1g)
  • 1/2 tsp salt (3g)
  • 1/4 tsp black pepper (1g)

For the Street Corn:

  • 2 cups corn kernels (fresh, frozen, or grilled)
  • 1 tbsp olive oil (15ml)
  • 1 tbsp mayonnaise (15g)
  • 1/2 tsp chili powder (1g)
  • 1/4 tsp paprika (1g)
  • 1/2 tsp lime juice (5ml)
  • 1/4 cup crumbled cotija cheese (30g)
  • Fresh cilantro, chopped, for garnish
  • Pinch of salt (to taste)

For the Rice Base:

  • 1 cup long-grain white rice (200g)
  • 2 cups water (480ml)
  • 1 tbsp butter (15g)
  • 1/2 tsp salt (3g)

For the Sauce:

  • 1/2 cup sour cream (120g)
  • 2 tbsp mayonnaise (30g)
  • 1 tbsp lime juice (15ml)
  • 1 tsp garlic powder (2g)
  • 1/2 tsp cumin (1g)
  • 1/4 tsp chili powder (1g)
  • Pinch of salt (to taste)

Additional Toppings:

  • 1 avocado, sliced
  • 1/4 cup shredded cheddar cheese (30g)
  • Lime wedges, for serving
  • Fresh cilantro, chopped, for garnish

Instructions

Step 1: Prepare the Rice Base

  1. Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and ensures fluffy rice.
  2. In a medium saucepan, add the rice, water, and salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
  4. Remove the rice from the heat and let it sit, covered, for about 5 minutes. Fluff the rice with a fork and stir in butter for extra richness.

Step 2: Grill the Chicken

  4. Stir in the crumbled cotija cheese and fresh cilantro for added flavor.
