Street Corn Chicken Rice Bowl Recipe

Ingredients (Serves 4)

  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1/2 teaspoon garlic powder

  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 lime, juiced

  • 1/4 cup green onions, chopped (optional)

Instructions

  1. Cook Chicken:
    Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Cook for 6-8 minutes, or until the chicken is browned and cooked through. Remove from heat and set aside.
