This Sweet Baby Ray’s Crockpot Chicken is a super easy, flavorful, and tender dish that’s perfect for busy weeknights! Made with juicy chicken, Sweet Baby Ray’s BBQ sauce, and a few simple seasonings, this slow cooker recipe creates a sweet, smoky, and slightly tangy BBQ chicken that you can shred and serve on sandwiches, rice, tacos, or even pizza.
Ingredients
- 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
- 1 ½ cups Sweet Baby Ray’s BBQ sauce
- ¼ cup honey (for extra sweetness)
- 2 tablespoons Dijon mustard (adds a slight tang)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika (optional, for smoky flavor)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon apple cider vinegar (enhances the tangy BBQ flavor)
- 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)
Instructions
1. Prepare the Chicken:
- Place the chicken breasts in the bottom of your crockpot. Season with salt, pepper, garlic powder, onion powder, and smoked paprika.
2. Mix the Sauce:
- In a small bowl, whisk together Sweet Baby Ray’s BBQ sauce, honey, Dijon mustard, Worcestershire sauce, and apple cider vinegar.
3. Slow Cook to Perfection:
- Pour the BBQ sauce mixture over the chicken, making sure it’s well coated.
- Cover and cook on:
- Low for 6-7 hours (best for tender, fall-apart chicken)
- High for 3-4 hours (for a quicker meal)
4. Shred & Serve:
- Once the chicken is fully cooked and tender, shred it with two forks directly in the crockpot. Let it soak in the BBQ sauce for 15 minutes on low heat for extra flavor.
5. (Optional) Thicken the Sauce:
- If you prefer a thicker BBQ sauce, mix 1 tablespoon cornstarch with 2 tablespoons water, stir it into the sauce, and let it cook for another 10-15 minutes on high.
6. Serve & Enjoy!
- Serve the shredded BBQ chicken on sandwich buns, over rice, in tacos, on nachos, or with a baked potato.
