Ingredients:
- 2 lb ground beef
- 2 packages kielbasa sausage, sliced into ½-inch pieces
- 2 (14.5 oz) cans peeled and diced tomatoes, drained
- 4 medium baking potatoes, peeled and diced
- 2 (15 oz) cans pinto beans, with liquid
- 1 (15.2 oz) can whole kernel corn, drained
- 2 (14.5 oz) cans diced tomatoes with green chile peppers, with liquid
- 1 (10 oz) package frozen mixed vegetables
- 4 cups water
- 2 tsp ground cumin
- 2 tsp chili powder
- Salt and pepper to taste
Instructions:
- In a large Dutch oven, heat over medium heat and sauté the chopped onion until softened.
- Add the ground beef to the pot and cook until browned, breaking it up as it cooks.
- Stir in the sliced kielbasa sausage and cook for another 3–5 minutes.
- Add the drained diced tomatoes, pinto beans (with liquid), corn, diced tomatoes with green chiles, and frozen mixed vegetables to the pot.
- Mix everything together, ensuring it’s well combined.
- Stir in the cumin, chili powder, salt, and pepper to taste.
- Add 4 cups of water to the stew and bring to a boil.
- Once boiling, reduce heat and let the stew simmer for about 40 minutes, until the potatoes are tender and the flavors have melded together.
