Ingredients:

  • 2 lb ground beef
  • 2 packages kielbasa sausage, sliced into ½ inch pieces
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 2 (14.5oz) cans peeled and diced tomatoes, drained
  • 4 medium baking potatoes, peeled and diced
  • 2 (15oz) cans pinto beans, with liquid
  • 1 (15.2oz) can whole kernel corn, drained
  • 2 (14.5oz) cans diced tomatoes with green chile pepper, with liquid
  • 1 (10oz) package frozen mixed vegetables
  • 4 cups water
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper, to taste

Instructions:

  1. In a Dutch oven over medium heat, sauté the onion until soft. Add ground beef and cook until browned and no longer pink.
  2. Add the sliced kielbasa sausage and cook for another 2-3 minutes.
  3. Pour in the drained diced tomatoes, pinto beans, corn, potatoes, diced tomatoes with green chilies, and frozen mixed vegetables.
  4. Stir to combine, then add cumin, chili powder, salt, and pepper.
  5. Add water, bring to a boil, then reduce heat to low and simmer for about 1 hour, until the potatoes are tender and the stew is well combined.
  6. Serve hot, and enjoy the hearty goodness of this Texas-style meal!
