Ingredients You’ll Need:
- 2 lbs stew meat (such as cubed chuck roast, top or bottom round, or steak)
- 1 ½ tbsp olive oil
- ½ cup onion (chopped)
- 2 garlic cloves (minced)
- ¼ cup red wine
- 10 ½ oz beef broth
- 10 ½ oz can condensed French onion soup
- 2 tbsp Worcestershire sauce
- 1 bay leaf
- 1 sprig fresh thyme
- Salt and pepper to taste
- 2 ½ tbsp cornstarch
- ¼ cup water

How to Make Beef Tips and Gravy:
- Brown the Meat: Season the beef with salt and pepper. In a medium-sized Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Brown the beef on all sides. Remove from the pot and set aside.
- Sauté Onions and Garlic: Add the remaining ½ tablespoon of olive oil to the pot. Sauté the onions and garlic until translucent (about 2 minutes).
- Deglaze the Pot: Pour in the red wine to deglaze the pot, scraping up any bits stuck to the bottom of the pot.
- Add Gravy Ingredients: Add beef broth, French onion soup, Worcestershire sauce, bay leaf, and thyme. Return the beef to the pot and bring it to a boil. Reduce heat and cover. Simmer for 2 hours or until the beef is tender.
- Thicken the Gravy: In a small bowl, make a slurry by mixing cornstarch with ¼ cup water. Slowly stir the slurry into the pot and continue cooking for 5 minutes or until the gravy thickens. Adjust seasoning with salt and pepper.
- Serve: Garnish with freshly chopped parsley and serve the beef tips and gravy over mashed potatoes or rice.
