Ingredients
For the Soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 4 cups chicken or beef broth
- 1 (15 oz) can tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- 8 ounces lasagna noodles, broken into bite-sized pieces
- 2 cups fresh spinach or kale (optional)
For the Cheese Topping:
- 1 cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Toppings (Optional):
- Fresh basil, chopped
- Grated Parmesan cheese
- Crusty bread for dipping
Instructions
Step 1: Cook the Sausage
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the Italian sausage and cook, breaking it into small pieces, until browned and fully cooked, about 5-7 minutes. Remove excess grease if necessary.
Step 2: Build the Soup Base
- Add the diced onion and garlic to the pot. Sauté until softened, about 3 minutes.
- Stir in the diced tomatoes, tomato paste, tomato sauce, and broth. Add the basil, oregano, red pepper flakes, salt, and black pepper. Stir well and bring to a boil.
Step 3: Cook the Pasta
- Reduce the heat to medium-low and add the broken lasagna noodles. Simmer, uncovered, for 10-12 minutes or until the pasta is tender. Stir occasionally to prevent sticking.
Step 4: Add Greens (Optional)
- Stir in the fresh spinach or kale during the last 2-3 minutes of cooking, if using.
Step 5: Prepare the Cheese Topping
- In a small bowl, combine ricotta cheese, mozzarella, Parmesan, parsley, salt, and pepper. Mix well.
Step 6: Serve
- Ladle the hot soup into bowls. Top each serving with a generous dollop of the cheese mixture.
- Garnish with fresh basil and extra Parmesan, if desired. Serve with crusty bread and enjoy!
Notes
- Sausage Substitute: You can use ground beef or turkey if you prefer.
- Make Ahead: The soup can be made ahead, but cook the pasta separately and add it when reheating to avoid overcooking.
- Vegetarian Option: Use plant-based sausage and vegetable broth for a vegetarian version.
- Thicker Soup: For a thicker consistency, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) at the end of cooking.
