Ingredients
Carrot Cake:
- 2 ½ cups all-purpose flour
- 2 tsp baking soda
- 1 ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 2 tsp vanilla extract
- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- ½ cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mix oil, granulated sugar, and brown sugar until combined. Add eggs and vanilla, beating well.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in grated carrots, pineapple, and nuts if using.
- Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
- Make the Frosting:
- Beat cream cheese and butter together until smooth and creamy. Gradually add powdered sugar, then mix in vanilla extract.
- Assemble the Cake:
- Place one cake layer on a serving plate and spread a generous layer of frosting. Top with the second layer and frost the top and sides. Decorate with chopped nuts or a sprinkle of cinnamon if desired.
Notes
