  • 250g Greek yogurt (full-fat or low-fat)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 100g grated cucumber (excess water squeezed out)

For Serving:

  • Whole wheat pita bread
  • Romaine lettuce leaves (for a low-carb option)
  • Extra feta and dill for garnish

Instructions

Step 1: Prepare the Chicken

  1. If using fresh chicken, cook it by boiling or baking, then shred or dice it into bite-sized pieces.
  2. If using leftover or rotisserie chicken, simply shred or chop it into a bowl.

Step 2: Make the Tzatziki Dressing

  1. In a bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, pepper, and oregano.
  2. Add the grated cucumber (make sure to squeeze out excess water to avoid a watery dressing).
  3. Mix well until the dressing is creamy and smooth.
